¡Hola! I am Maestra Apolin, the Dual Language Immersion 2nd grade teacher. My husband and I moved to Hyrum last year. This gorgeous valley stole our hearts! We are enjoying the gradual progress of our hobby farm: fruit trees, herbs, flowers, vegetables, chickens and maybe even an alpaca! My husband’s from Peru 😊. We love outdoor activities and visiting National Parks.
I am privileged to have taught two years for Granite, 3rd grade DLI, and ten years each in North Carolina and California as a DLI Spanish teacher, ESL specialist and Special Education teacher. One of my children is in CA, and the other in NC. My son and his wife are part of the medical community of Loma Linda Hospital in Southern CA and my daughter is a Veterinary Medicine student at NC State in Raleigh.
I grew up in Singapore and graduated from the Singapore American School. My mom was a teacher and avid traveler. Every school holiday we had our backpacks on and were exploring a new corner of the world. Two of my favorites were the mountainous regions of Nepal and Darjeeling in northern India. I am so happy to be here in Cache County nestled in the mountains! My favorite colors are teal, coral and raspberry. My special treats are chocolate-covered fruits/nuts and I love smoothies. I can’t wait to meet you!

I am from Aguascalientes, Mexico and I truly love my Mexican heritage. I grew up in rural Idaho and have lived in the states since the age of four. I attended Utah State University for eight years as a first generation college student and received two bachelor degrees. I love learning, but I have loved teaching even more! My most favorite things ever are homemade Mexican food and puppies. On the weekends/long breaks/summers, you will find me spending time with my loved ones – far and near – creating and sharing special memories with them. Winter is not my favorite; thank goodness for Starbucks and their seasonal brews, or I would not survive. I am also not a fan of mint flavored anything. My favorite color depends on my mood – but red, blue and purple have always been my top three. My favorite treats are Coke and Hershey’s Cookies and Cream. My favorite flowers are ranunculus.

Como maestra de doble inmersión, ¡me encanta compartir mi idioma y mi cultura con todos mis estudiantes!

My favorite place to hike is in Glacier National Park in Montana, although I'm always scared we'll run into a bear! I also like to make quilts, read, watch movies with my family, and go on vacation to warm places. I attended Idaho State University where I earned my Bachelor's Degree in Elementary Education. I also met my amazing bike-riding, computer-programming husband Matthew there. We have been married since 2002 and moved to Cache Valley in 2003. We have lived in Nibley since 2005 and are raising our family of two girls (Jane and Kate) and two boys (Thomas and Maxwell) here. My children have all attended (or are still attending) Heritage Elementary and I am honored for the opportunity to join the faculty here.

I have worked in education as a third grade teacher, reading facilitator, reading teacher, reading aide, and resource aide. I have worked at several schools in the valley: Woodruff Elementary, Wilson Elementary, Willow Valley Middle School, Hillcrest Elementary and now Heritage Elementary. I have always been passionate about education and am so excited to return to teaching full time. I love the hard-working, dedicated, and kind atmosphere from the teachers and students at Heritage Elementary. I'm so happy to be a Heritage Husky!

I was able to meet my grandparents and relatives as well as to travel to many areas and learn about different cultural traditions. I loved living 30 minutes from the beach but I've learned to love the mountains too. My family and I have been in Cache County since 2008 and no matter how many years pass, I'm still not used to the cold. I graduated from BYU-Idaho where I met my husband and we have three wonderful boys. I have 3 adult children that I love to spend time with, but it’s difficult because one lives in North Dakota, one lives in Arizona and one is away at college.  So, I enjoy working with my students as I watch them become a team, solve problems together and discover how to be better people throughout our year together.

Ms. Carol DeFriez

I am so excited to join the staff at Heritage Elementary! My husband and I have lived in Cache Valley for over 25 years, we love it here! I have taught for 10 years, at both the first and fifth grade levels. I have taught most of that time at Lewiston Elementary and have loved working there. I chose to do an emphasis in ESL while attending USU, thinking I would transition into it eventually. I had an interest in teaching English as a second language because I learned Spanish in Guatemala and loved learning a language! The time has come to make the change, and I look forward to using the knowledge I gained at the University and throughout my career to teach ESL. I also look forward to learning all I can from everyone at Heritage.  Now, a little about me, I have 6 children, 4 daughters, and 2 sons. I also have five beautiful grandchildren. I love to read, hike, travel, and spend time with my family. Some of my favorite treats are brownies and Reese's peanut butter cups. I look forward to working with the great people at Heritage Elementary!

Mr. Logan Eubanks

Please allow me to introduce myself, my name is Logan Eubanks.
Professionally, I have been teaching with Cache County School District since 2003.  I spent the first 7 years at Summit Elementary in Smithfield Utah, and have been lucky enough to teach here at Heritage since It's beginning in 2010 (man time moves fast). I am Aggie, I received both my Bachelors of Science and Masters of Education in Special Education at Utah State University. I have the best job because I get to mix it up with students from Kindergarten to 6th grade.
On the Personal side of life, I am family man.  I enjoy coaching my kids and have coached many teams in basketball and soccer over the last 18 years at both rec and competitive levels.  I love to mountain bike with my wife and ski & snowboard with my family. I wish I could be outside more hiking and camping.  I am a horrible fly fisherman but a pretty good handyman. I have developed a sweet tooth for chocolate as I have gotten older. My favorites/weaknesses are Reisens, Heath bars, and Phish Food ice cream. Now that I wrote that down I feel guilty and need to go for a run. I have been a runner 20 years and have ran 5 marathons.
My hope is to keep both my mind and body active. If I could do something more,  it would be travel and see more of the world.  I love to learn about other cultures and eat their foods.  My favorites are Mexican, Indian, and pizza.
